The keys exist, but they do something else. On a Mac, Home and End scroll to the very top and bottom of the document without moving the cursor, which is why the text seems to jump away from you. The Windows behaviour, start and end of the line, lives on the ⌘ key:

On a MacBook keyboard there are no Home and End keys at all; fn← and fn→ stand in, with the same scroll-only behaviour. A PC keyboard plugged into a Mac keeps its Home and End keys, still doing the Mac thing.
Most people relearn ⌘← within a week. If your fingers have twenty years of Home and End in them, a keyboard tool can rewrite the keys instead.
