With acceleration, the pointer travels further when you move the mouse faster, so the same hand movement lands in different places. Windows has it off by default (Enhance pointer precision is a milder version); macOS has it on, which is why the pointer feels floaty for the first days.
Since macOS 14 there is a switch: System Settings → Mouse → Advanced → Pointer acceleration. Turn it off, then raise the tracking speed a notch or two, because without acceleration the default speed feels slow. A restart or a log-out finishes the change in some apps.
Trackpads keep their own tracking speed under System Settings → Trackpad, and are better left accelerated: a finger has far less travel than a mouse.
